Girl Scout Cookie Recipes - Do Si Do Peanut Butter Sandwich

Peanut Butter - either you hate it or love it. Either you’re allergic to peanuts or you’re not. For those who enjoy a bit of pbuttnutter below are some more Girl Scout Cookie recipes that use Do Si Do Peanut Butter Sandwich cookies. By the way, of all the Girl Scout cookies that freeze and store well, the Peanut Butter Sandwiches are the only ones that do not freeze well (they end up stale). Therefore if you find yourself with more than a few boxes of Do Si Do’s - you might want to try some of these recipes!
CRUNCHY CARAMEL APPLES:
12 Do-Si-Do / Peanut Butter Sandwich cookies (crushed)
12 small apples
1 pkg. (16 oz.) caramels
12 wooden sticks
Insert sticks into top of apples. Melt caramels in double boiler. Dip apples in caramel using a spoon to evenly spread caramel over whole apple. Allow excess caramel to drip off. Immediately dip bottoms of apples into crumbs. Place caramel-covered apple cookie side down on wax paper and let stand about 30 min or until firm.

SCAVENGER DELIGHT:
1 – 6 oz. pkg. instant chocolate pudding
1 cup milk
1 pkg. Do-Si-Do / Peanut Butter Sandwich cookies
2 lbs. butter (melted)
6 oz. prepared whipped topping
1 – 4 oz. pkg. cream cheese
Mix cookie crumbs and melted butter. Pour into 9″ x 13″ pan. Mix pudding with 1 cup of milk until thick. Spread pudding over crust. Mix whipped topping and cream cheese and spread over pudding. Chill to thicken.

PEANUT BUTTER BUNDT CAKE
1 package of Peanut Butter Sandwich / Do Si Do cookies
1 package of Peanut Butter Patties / Tagalong (frozen)
1 package of yellow cake mix
1 cup confectioners sugar
¾ tablespoon (Tbsp) milk
Coarsely crumble the Peanut Butter Sandwich cookies. Finely chop the frozen Peanut Butter Patties with a knife and remove ½ cup. Place the remaining Peanut Butter Patties in the bottom of a well-greased bundt pan. Prepare cake mix according to directions of box. Mix Peanut Butter Sandwich cookies into cake batter. Pour over crumbs in pan. Bake according to box directions. While baking, mix the sugar and milk. Glaze cake with sugar and milk mixture while cake is warm. Sprinkle on remaining Peanut Butter Patties crumbs. (May also be glazed with chocolate or peanut butter icing.)

PEANUT BUTTER AND JELLY ICE CREAM SUNDAY PIE
1 box (9 oz.) Girl Scout Peanut Butter Sandwich / Do Si Do Cookies
5 tablespoons butter or margarine, melted
1 quart vanilla ice cream, softened
2/3 cup strawberry topping
1/3 cup peanuts, chopped
Chocolate fudge topping, optional
Place cookies in food processor or blender; process until fine crumbs. To make crust, combine cookie crumbs and butter. Set aside 1/2 cup of crumb mixture and press remaining crumbs into bottom and sides of an ungreased 9-inch pie pan. Freeze until firm. Spread 2 cups ice cream in an even layer over cookie crust. Drizzle with 1/3 cup strawberry topping and sprinkle with 1/4 cup reserved crumb mixture. Top with remaining 2 cups ice cream, spread in an even layer. Drizzle with remaining 1/3 cup strawberry topping. Sprinkle with remaining 1/4 cup crumb topping and chopped peanuts. Freeze until firm. To serve, cut into 8 wedges. If desired, top each serving with chocolate fudge topping.
